Don's is located along a Highway 377 a few miles south of Lake Texoma. I wondered if Texas BBQ quality would suffer this close to Oklahoma. The newly constructed building didn't give me much hope, but I went inside and ordered anyway. I asked for a sliced beef sandwich and ribs. The sliced beef came out looking more like nearly chopped beef, so the delectably smoky crust was inconsistent. Morsels without crust lacked smoke, but still had good flavor, if a bit roast-beefy, and was moist and tender. The ribs had a good crust on top, but too much fat along the bottom. The meat was moist and tender, but the flavor was lacking a bit outside of pure smoke. This was till a tasty rib. After a few bites I realized that even with its proximity to OK, this 'cue was still pure Texan.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
